Ellie already mentioned in JP3 that she tries her hardest to forget what happened in JP1, so this line here is pretty chilling when you think about it. Not just things like being attacked by the T. Rex or the raptors, but you realize she's the only one of the main cast who in some way witnessed the aftermath of all three main victims (not counting Nedry because it was his fault) of the original Nublar incident - finding Gennaro's remains, Arnold's severed arm landing on her, and very likely hearing Muldoon's blood-curdling screams as he's being eaten alive by the raptors.
The fear of being attacked and eaten alive by those dangerous animals combined with all of those lurid sights and sounds probably spawns the most horrific nightmares that I wouldn't wish on my worst enemy.

This was a very important scene due to the fact that Dr. Grant has had a deep fear of these creatures for thirty long years. As we know from the third movie, the trauma of that first park and what occurred there, continues to haunt his nightmares and that's not something you ever forget. He sees them as vicious and unpredictable. So, the chance to meet two people who actually understands them and are able to train them to some degree, and then when he has the chance to mimic a gesture that has been so significant in keeping them under control, is a massive, personal win for him.
