Carbs before/during the workout, protein within 20 minutes after completing a workout or at least within an hour and a half. Lots and lots of water all the time. Try drinking a liter of water when you get up before you eat or drink anything else. That's how I do it. It's worked for me for more than 30 years. I'm 66 and not slowing down.

I get the same restlessness and inability to sleep when I do a turbo session in the evening. As it's often the only time I get to work out I have just resigned myself to poor sleep on those nights. Apparently it is to do with an increase in adrenaline and cortisol, which can take several hours to 'flush' out of your system.
