The more I watch stuff like this, the more attractive it becomes to buy a few acres of land, grow our own food, plant a few fruit trees, some strawberry plants, some raspberry bushes, raise a cow and a pig every year, raise chickens for our eggs and poultry and become as self sufficient as possible

I am comfortable buying meat at my stores I use to work there, we do not have a meat processor there. All the meat we sold (And the meat they still sell) came in on a truck, they can't repackage it or re-redden it.
That said, we actually buy our cuts of meat from an actual butcher. Ground beef, cold cuts and chickens from the store, Steak, pork chops, and ham, the butcher.

I worked on a Kroger bakery for years and they were actually good with best by dates. We did cut cakes down, but they always received the same best by as the original cake they came from. Fruit tarts were trashed if going bad, and the meat department manager was strict in making sure everything was sanitary and by the book.
The pay and work ethic sucked though.

I worked at a Subway and we would put little stickers on it saying when the product expires. My manager told us to just replace the stickers when it expired. Once there was mold on some of our meat, and she asked me to just take the top layer off. The meatballs were only sposed to be good after a few hours, but we would just replace the stickers. We would also put the left over meatballs in the fridge at night, and reheat them the next day, which we are NOT supposed to do.

Behavior like this varies from company to company.
I worked at 2 cafés in my student-life. The first one we were told to be VERY safe about expiration dates and "best before" labeling. We even got the allowance of our boss to throw anything out we had doubts about if it was still good.
The second place I worked on, mainly sold cake. I worked sparcely whenever Uni allowed it. But it was quite disturbing to return to my shift after 2 weeks of study, just to find the very same cake in the display I left there in my past shift. I always threw it away if that happened, and just told my boss it sold out when he asked where it went.
I didn't care much if he found out and fired me. It was just to get some cash on the side. My life wasn't depending on this job. But I'd much rather get fired than potentionally harming the customers that I serve.

I have worked in the produce, meat, and bakery departments at a BJ's wholesale club in the U.S.. at the store I worked at, dates were taken very seriously. If dates were ever changed, they were only shortened. I am very thankful I belonged to a store that didnt make me cheat dates like this.
