this scene does a LOT.
1) shows Grant doesn't like kids.
2) shows Ellie is nicer.
3) gives a crap ton of exposition about how smart raptors are, how they hunt (setting up the Muldoon scene), and even about how the T-Rex's vision works, which is hugely important later.
4) it pre-emptively shuts down audience members who might say this about the raptor, too, when Grant shows the claw, explains how smart they are, and explains how vicious they are. It sets up that as soon as you hear later on that JP has raptors, now you're scared of them ever getting out, just based on what you learned in THIS scene.
5) it explains the unknown-ish theory at the time that dinos are more like birds instead of reptiles, which makes a lot of their later animation and behavior make more sense.
in a good screenplay, each scene has several goals. this is an exposition and set up scene that develops multiple characters and sets up later threats. it's well-written.

No doubt Steven Spielberg did this scene to foreshadow the event that would follow in Muldoon's death in the forest when the whole "Clever Girl" scenario occurs!
Granted it wasn't two raptors that came from both sides like Grant gives here, but the attack was coordinated! First, Muldoon sees the one raptor and prepares to shoot it, however, while he was doing that, the 2nd raptor was sneaking up on his left side, and by the time Muldoon was ready to fire, the raptor had the jump on him before he could do anything about it!

That kid has no idea how scary a regular sized Turkeys are. A 6 foot Turkey would be nightmare fuel.
