Homemade Passover Recipes | Potato Matzo Patties | Vegan and Tasty

I cherish and miss the food cooked by my Mom. As they say, Food is an emotion and it brings so many memories and people together. Back then, when I was in Israel, I didn’t really enjoy some of the traditional cuisines .
After getting married to Richard and moving to Canada – I have been cherishing some of these memories a lot more. I thought of sharing one such recipe inspired by my Mom - Potato patties with Matzo on this Passover.

Passover is a Jewish celebration and as per some customs you are not permitted to consume bread and they cook Matzo during the Passover week. To be honest, back then I loved bread and I couldn’t live a day without having bread. I could have bread with everything.

When Richard and I made the decision to stop eating bread for better health and lifestyle – I was initially hesitant and was afraid that I may not be able to accept this change. Over time, it got so much easier and I am glad I made this shift. Usually after our meals, we want to go for a walk. I like to stay active by cleaning the kitchen and doing household work, but after eating something that contains gluten, I usually feel like taking rest or a nap. When we consume bread, we feel so bloated, heavy and burn out faster during the course of the day.

I would like to share with you this homemade recipe of Potato Patties with Matzo which you can treat yourself during the Passover period. I ate this with some homemade spicy sauce.

Potato patties with matzo

Ingredients:
9 potatoes
2 tbsp vegan butter/oil
2 onions
3 whole mushrooms
1 tsp salt
¼ tsp pepper

3 cups matzo

Hot water/tomato sauce

½ tsp turmeric
½ tsp curry

Directions:
Peel and chop the potatoes and put it in the pan and allow it to boil. Now dice some mushrooms and onions separately, add salt and pepper, gently stir fry it until it softens and turns brown in colour. When the potatoes are boiled and ready, strain the water and add some vegan oil/ butter and mash it well until it turns buttery smooth!

Now add the stir fry mushroom onion mix to the mashed potatoes and mix all of them well.

In a separate bowl, take 3 cups of Matzo. Break them into small pieces to make sure that it can absorb water quickly and allow it to get soft. Add the Matzo to the mashed potato bowl and again mix all of them well.

You can also make it into a patty or make 3 different colours by adding more flavours to it. My Boys love it this way. Here are 3 ways you can try out. Take 3 bowls and add the mix evenly across all the three bowls and follow the steps mentioned below :

1. First bowl as it is, just add ¼ cup of hot water and mix it well allowing the matzo absorb it and set aside.

2. Second bowl, add ¼ cup hot water, ½ tsp turmeric and ½ tsp curry, mix well and set aside.

3. Third bowl, add ½ cup tomato sauce (depending on consistency and taste), mix well and set aside

Now you have two options either to bake it or fry it. You can try any of it! In my opinion, since I have tried both the methods, I prefer to bake since it is less messy in the kitchen and also a healthier option.
But most importantly because it's much tastier then frying.

After you have shaped and placed in the patties on the tray as shown in the photo and video, preheat your oven and bake for 20 minutes on each side. Total time to bake – 40 min.

If you are frying – Fry until each side is brown in colour.

My Boys Love it ‘Plain’. Richard and I love all 3 and we ensure it gets finished in one sitting.


Note: Passover is a very popular traditional holiday, you can find Matzo in many places, like Costco and Walmart .
