焯水是對付家庭小灶的最好方法, 我試過好多次, 不要以為焯水濕了炒不乾, 不焯水把冷的食材丟進鍋, 溫度拉不上來就會不停出水, 那時候更濕. 焯水就是省了一大段溫度提升的時間, 最少相差個 60度

我用微波炉高火2分钟代替焯水,其他都按照王刚教的做,增加了半根胡萝卜和几片木耳配色。脆脆的好吃极了!谢谢王刚!

多年前在一家街邊熱炒店點一道高麗菜心(包菜在台灣也叫高麗菜),廚師也是這樣處理,先淖一下水再快炒出鍋,非常快速,現在回想確實沒有一般快炒店料理得那樣多油。 我自己在家做的心得是,懶得先過滾水,也不想多油(沒那火力),還是直接下鍋炒,但是到一定點上,菜快炒乾巴了但還沒熟,這時從鍋邊淋一點水進去,嘩一下出一大堆水蒸氣同時快速拌炒一會兒就熟了,自家吃吃也挺不錯的😄
