A chef in Hanoi told me about putting lime juice (that you squeeze) and vinegar in pho, too (or at least, in beef pho). Maybe it's a northern thing, but it's good. Also, in Vietnam it's usually eaten for breakfast when the noodles are freshest. And there's nothing better than pho for breakfast!

I watched this video for a minute then asked my wife if she wanted to go out and eat Pho. It was 8:30 PM in Las Vegas. She said yes so we went to a Pho restaurant we'd never been to before and had outstanding Pho. Thanks for the inspiration.
