I think you know this! Diacetyl - is that Butter Popcorn flavor in alcohol that is caused by fermentation, in many cases to reduce that popcorn flavor you want to give your fermentation a diacetyl rest, at the end, holding temperatures at 15-18C for several days and then chilling down to 0-4C to cold condition the solids to the bottom of the mash. Some people like that flavor, some people don't, so it's entirely by taste
