Mint and limes are not the same in Cuba… and they use « white » (raffiné) sugar cane. I like to use pepper mint and « Agricole » white rhum from French Caribbean. Stronger taste of cane, dryer. If made with Cuban Ron I will add few dashes of Angostura bitter. Regarding sugar cane, sirup is more diluabke but I always add sugar cane flakes cause people love to have crunchy in mouth.

Moroccan wild mint or water lily mint are also good build-ups for mojitos. Moroccan is very strong herbaceous with a complex flavour pallet and brings in some diversity. Waterlily mint gives it a more light note, but not for the downside of flavour. I would recommend that in twist for Asian or tiki/ exotic mojito specials.
