INGREDIENTS:
Sweet potato filling:
5~6 cooked sweet potatoes(700g)
100ml vegan heavy cream or vegan spray whipped cream
100g vegetable milk (I used oat)
35g sugar
35g vegan butter

Vegan whipped cream for frosting:
350ml vegan whipping cream. (Like soya for cooking or vegan whipped cream spray as I used)
Sugar 30g.

RECIPE:
I used a store-bought cake base instead of making a Genoise! (Cus I'm lazy and making a genoise in my room wasn't an option ahaha)

Sweet potato filling
1. In a pot, cook sweet potatoes until the potatoes are completely soft.
2. Peel and mash while they are hot. (Careful with your hands!)
3. In a pot, add milk, heavy cream, sugar and butter. Boil until butter melts.
4. Mash sweet potatoes and wait for them to cool down.
If you want it smoother, blend using a mixer.
5. Mix mashed potato with the liquids.

Whipping cream for frosting
In a large bowl, whip the whipping cream and sugar until it rises, or just use spray one as I did.

ASSEMBLY
1. Cut the genoise into 2 layers.
2. Spread sweet potato filling and repeat!
3. Decorate the cake with whipped cream.
4. Coated with powdered genoise for the final touch!

Disclaimer:
