4:15 IMO it makes logical sense. Building barracks let evolve into more units. When you build horse units you need to counter them and thank of that you discover spears. Making archery units you can discover bigger bows like Ballista End and so on

4:50 The Castle of AoE2 IMO is an evolution of the Academy, being where you train elite units. The hoplite is basically the equivalent of the UU for all civs.

The military building unlock progression might seem strange at first, but there are some reasons why it makes actual sense.
The archery range is for 1st level ranged weapons and the siege workshop is 2nd level. While archers are nice in unit-to-unit combat, they can't deal well with buildings but the catapults can.
Similarly, the stable is 2nd level close combat and the academy is 3rd level close combat and the same as for the catapults applies.
Also, if you think from an AoE2 perspective, catapults are a counter to archers and spearman are a counter to horses. The archer counter is a new thing of course because archers didn't group in AoE1 making them effective counters to catapults if you could kite them. I'm not sure if the balance is pushed more towards counters in Return of Rome and we'll need to wait how the strategies are developing in the near and far future.

I can see that Stable unlocking Academy because horse riding and chariot driving would have been the domain of the social elite.
So your nobility are the ones forming your heavy cavalry and chariotry in the Bronze Age and then later in the Iron Age your high class citizen-soldiers are forming your heavy infantry.
Most Eurasian societies that had mixed arms and complex social stratification followed this divide.
Commoners on foot; Nobles mounted on the biggest, angriest and coolest animal/war machine possible.

The villager bonus of siegecraft isn't irrelevant. Zealotry vills with siegecraft are the best trash units after chariots. Some civs don't have chariots so their only option was to go with zealotry vills and siegecraft was huge bonus for that. Now that you can sell stuff to get gold, you can probably still make gold units in late game, but in original game after you ran out of gold, you had little options.
