Here's a delicious Vegan Masala Omelette recipe that isn't a besan chilli. Please try this recipe!

Omelette Batter

1 package firm tofu, crumbled (about 1 1/2 cups/ 150 gas)
3/4 cup unsweetened non-dairy milk
1/4 water if needed to make the batter runny
1/4 cup chickpea flour
2 1/2 tablespoon tapioca starch
1/2 tsp turmeric
1/2 tsp Kala Namak

Add all the ingredients to a blender. Season as required. The batter should be like an egg omelette batter so less thick than a pancake batter. You can add more water/plant milk to adjust the consistency and make sure to adjust for salt too. Then add in the onions tomatoes and green chillies. Fry in a pan and top with fresh coriander leaves. I had some minty chutney lying around so I topped the omelette with that and some ketchup. This would work really well with some vegan cheese too!
