After Thanksgiving, DON’T THROW AWAY THE BONES! MAKE NOODLE SOUP! At least, that’s what I always love to do with leftover turkey carcasses.

I didn’t make turkey for Thanksgiving this year, but my friend Mike P. hooked me up with his Turkey carcass with tons of leftover turkey meat for me to make Turkey Pho. Seeing @thetastebud and @christycooks_ make their versions made me hella want to make Turkey Pho too!

Put everything in a large stockpot, bring to a boil, and simmer for ~1.5 hours. Simmer to taste and the broth is ready.

Assemble noodle bowls with Turkey and your favorite proteins, veggies, and herbs pour in hot turkey broth, and enjoy! My buddy smoked his turkey so there was a delicious subtle smoky taste to it as well!

Broth Ingredients:
12 cups of filtered water
Leftover Turkey Bones
1 yellow onion
4 ounces daikon
1 ginger knob
1 Fuji Apple
3 tablespoons fish sauce
1 tablespoon salt, more or less to taste
1 piece rock sugar
1 tablespoon chicken bouillon, more or less to taste
1 bag Old Man Que Huong Brand Pho Spice Seasoning

Phở Bowls Toppings and Gàrnishes:
Rice noodles (Look for the word Phở on the package),
Quail Eggs
Green Onions, chopped
Cilantro, chopped
Bean Sprouts
Thai Basil
Jalapenos, thinly sliced
Lime
Black pepper
