This super quick and easy spaghetti packs such a gorgeous flavour & trust me pastas made with fewer and simple ingredients turn out the best . Make this whilst these sweet little cherry tomatoes are in season.

Ingredients :

🍝 boiled spaghetti / pasta of your choice
🍝 8-10 cherry tomatoes
🍝 olive oil ( use a good quality one for better flavour )
🍝 2-3 garlic cloves chopped ( or more if you prefer)
🍝 chopped parsley
🍝 Parmesan cheese
🍝 1/4 cup leftover pasta water
🍝 salt / pepper

Method

🍝 boil the pasta al dente and reserve some of that pasta water
🍝 Heat some olive oil in a pan and add in the chopped garlic and stir it for about 20 -30 seconds and then add in the chopped cherry tomatoes and cook on low - medium heat for 30-40 seconds
🍝 add in the salt, pepper and chopped Parsley
🍝 add your cooked spaghetti, Parmesan and little bit of the reserved pasta water and mix it all well until combined . The cherry tomatoes will burst and infuse in the flavour so we’ll.
🍝 garnish it with more Parmesan on top and some parsley
