CARROT CAKE CUPCAKES (makes 24 cupcakes)
Mix dry ingredients...
3 cups flour
2 tsp. baking soda
2 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp ginger
Mix wet ingredients
1 and 1/2 cups honey
3/4 cup milk
3 eggs
1/2 cup oil
2 tsp vanilla
1. 8 ounce can crushed pineapple - drained
2 cups shredded carrots
3/4 cup chopped walnuts (optional)
Mix dry ingredients with wet ingredients thoroughly
Fill cupcake wells 3/4 full. Bake at 350° oven for 20-23 minutes or until a golden brown. Let cupcakes cool before frosting.
HONEY FROSTING
1. 8 ounce package of softened cream cheese
1/4 cup butter
1/4 cup honey
1 tsp vanilla
Mix until creamed and frost cupcakes
