At its peak, your starter is bursting with yeast, ready to create those delicious bubbles that make your bread rise!
Signs Your Sourdough Starter is at Peak:
1. It should at least double in size.
2. Look for bubbles around the sides and on top-both big and small.
3. Shake the jar; it should have a playful wobble.
4. Tap the jar on the counter, and it will deflate, with bubbles rising to the surface. Leave it for 10 minutes, and it should rise again.
5. Tilt the jar or use a spoon to reveal a network of gluten strands.
6. It should smell sweet and yeasty, not like acetone or alcohol.
