Bombastic recipe, few suggestion by my side-
(1) plate colour should have been something contrast of curd(white) like black, olive green.
(2) consistency of curd could have been thick to avoid flowing of cavier and still standing of potato stack.
(3)while you were layering potato you could have added tint of flavour and colour from within, so that it is still soft from inside and crunchy outside but not plain flavoured.

MODERNIST CUISINE: Street Food to Fine Dine
This is the second series of Modernist Cuisine where I converted an Indian street food dish to something modern. This time we had Aloo Tikki Chaat.
Honestly, this was planned for Navratri along with the “sweet dish” but I realised 9 days just aren’t enough to ideate, plan, shoot and edit 2 complete dishes. Also, I wanted to be thorough and do justice to this iconic dish. Trust me, we had so many fails that whole 2-3 day worth of footage was rendered useless because of a simple fail. Especially our dahi foam.
Many suggested me to abandon Aloo Tikki and start with Vada Pav as it was trending but that didn’t seem right. Each and every component of this dish was iconic and I am super proud of us to bring this amazing idea to life.
I hope many benefit from this and I wish we take our Indian cuisine to heights which we have never dreamt of.
