Weekend Sandwiches Recipe

weekend sandwiches 🫶🏼 this one’s going to be on repeat all summer 🍃

details:
•toasted ciabatta
•basil whipped feta
•avocado
•arugula with olive oil & hot honey
•roasted mini peppers with balsamic
burrata
•flakey salt & pepper

Basil Whipped Feta:
8 oz feta cheese
1/4 cup cottage cheese or ricotta
1/2 cup packed basil
2 tbsp lemon juice
1 clove garlic
1-2 tbsp olive oil
Pinch of salt

Add all of the ingredients to a blender or food processor and blend until smooth. Add more olive oil as needed to blend.

Refrigerate for up to 1 week and serve with roasted veggies or as a spread on sandwiches

Roasted Peppers:
1 lb colored mini peppers, stem removed
Olive oil
Balsamic glaze
Salt

1. Add the peppers to a baking sheet or pan and drizzle with a little olive oil and salt. Roast on 400 F for about 10-15 minutes, until they’re charred, then broil for 2-3 minutes. **Roast time will depend on oven and baking dish used, they should be blistered before broiling
2. Remove the peppers from the oven and add them directly to a container or ziplock bag and seal the bag. Let them sit for 10 minutes to soften.
