So if I eat mostly protein and fats for supper, maybe my dessert isn't going to be too bad of a thing. Maybe that's why people always made dessert the last thing they ate.

Sorry, but I am not micromanaging the macro nutrients I eat by isolating them from each other in the same meal and eating some first before the others. I am just gonna eat my damn macro nutrients together and a single meal and quit freaking out some glucose bike, which doesn’t really matter unless I’m a diabetic because I am an active/fit and healthy person anyway and outside of the context of diabetes, glucose spikes don’t mean very much unless you are over consuming calories. And even then, diabetics typically are overweight and need to lose weight if they want to handle glucose spikes better.
