I was so worried the reason you don’t peel the egg is because the shell just gets mashed in with the rest of it in the salad.

Yes, salted duck eggs are really hard to peal, but the salt curing process has little to no effect on the shell. What the salt curing process actually does is make both the albumen and the amnionic sack really sticky, especially when it's boiled. With a regular egg, the albumen and the amnionic sack tend to separate quite easily from each other. This doesn't happen with salted eggs.

We also have that in the Philippines. (Maybe another chinese influence?) I do the same thing. It's just easier to cut it in half and scoop out the egg.

Cutting through boiled salted eggs with shells on are so common tho. People who are so shocked probably have never actually eaten salted eggs or just never prepared a dish with it..

I’m Indonesian and I also open my salted egg that way! 😄 sometimes I even just use my spoon instead of a knife if the edges are sharp. This is an interesting combination btw, I need to try this

Salted eggs are usually used in Nasi kerabu in Malaysia, and we always serve it cut in half and its always soo fun to just scoop out the contents its really nice

Thats how we do it in the Philippines! Its like a small avocado without the seed. Cut through and scoop it out. Then add cut tomatoes, raw onion and marinate everything in vinegar and a bit of sugar. All you need is some rice! ❤️

One of my favourite things on the planet. Growing up in Malaysia, we used to boil the eggs in the rice and serve them as a side with our lovely meals. Def will try this soon, thank you.

I have peeled it. It's possible but harder than regular egg. But cutting through it and scooping is totally normal too.

Ooooo I must try! Summer is all about som tom for me. I probably eat it twice a week and am always trying to change things up. BTW I splurged and got Red Boat’s palm sugar and…. it’s so good!! Very deep complex flavor. It’s got to be 100% palm. I save it for salads.
