"why do we even need any of that stuff" Most of it is preservatives, so they stay shelf stable during the time they're being shipped from the factory, while they're sitting on shelves at the stores, and while they're sitting in people's pantries - easily can add up to a couple weeks of time that they need to keep for.

Compare this to a homemade tortilla - they start getting stale or moldy after a few days. Which is fine, because usually if you're making something homemade, it's getting eaten right away anyway. But a lot of people don't have the time or patience to be making a bunch of things from scratch these days. While I do agree making tortillas at home is definitely the best and fun to do, it's not always the easiest for some to make the time for even something as simple as this.

I think the best compromise is getting tortillas from a local Mexican market if you have one near you, because most of them make fresh tortillas. Or from a Mexican restaurant that makes them fresh, usually they are happy to sell them in batches, and it supports local business
