Creep is good for transitioning but Hold is literally the best option as you never need to use your brakes unless you absolutely need to.

Roll is good during flat riding. The car just rolls so you use gravity and not energy to keep it running, it depends on wind direction though and traffic ahead. But driving downhill, your speed can increase but upwards you use this speed to clime back up with minimum energy usage, of course consider the speed limit. Also you dont regen that much extra due to heat losses during hold mode unless you drive downwards for a longer period of time, then you regen good yes. But if you need to go back up again this regen is just going to be used and most of it into heat losses.

There are slippery roads in Norway and I use Roll, then the car brakes are not too dangerous. Besides, it is good to use the brakes occasionally because they rust.

Just fyi roll gives you the most range. Hold applied real breaks

I would use hold but the pedal is too sensitive when exiting a parking spot and the car goes too fast without creep

Roll is the best one for efficiency. Letting the car slow down instead of using breaks is always better than using breaks to slow down and regen.

Wrong. All modes now REGENERATE THE SAME. The difference is the first two are for those who insist on stying in the dinosaur era and the last one (Hold) is for those embracing the future which is NOW. Regeneration is the same, but is up to you to be smart and let the car slow down and brake by itself and only use the brake pedal when needed or be stupid and keep wasting the brake pads and rotors by having to use them all the time like old school dinosaur ICE vehicles.
