One of the best desserts in the world imo (I love all desserts tho) Homemade vanilla ice cream + lava cake🍦🍫 can never go wrong with it. Full recipes below<3
Vanilla Ice Cream
(Adapted from the Haagen Dazs base recipe)
INGREDIENTS
* 1 cup whole milk
* 2 and 1/4cups heavy cream
* 1/2 cup granulated sugar
* 4-6 egg yolks (depending on how custardy you want it. I usually do 4).
* 1/2 tsp coarse salt
INSTRUCTIONS
1. Pour milk and cream into a pan and bring to a simmer. Simmer on low heat for 30 minutes. During this time, mix in salt.
2. In a bowl, whisk together eggs and sugar.
3. Into the bowl of eggs and sugar, gently add in a couple spoonfuls of heated milk, adding one at a time while whisking quickly as to not scramble the eggs.
4. Now slowly pour the egg mixture into the rest of the hot milk, whisking frequently for about 5 minutes on low- medium low heat. You want it to slightly thicken and be able to coat the back of a spoon. If you have a thermometer, bring the temp to about 174*F. Be careful not to scramble the eggs at this point. After it’s thickened/reached the right temperature, quickly remove from heat and pour into a clean bowl. If you’d like, pass the mixture through a sieve while pouring to ensure smoothness (this is good to do if it’s your first time making ice cream, just incase there are any cooked pieces of eggs).
5. Cool thoroughly in the fridge, about 4 hours or overnight for the best texture.
6. Pour mixture into your ice cream maker. Process following manufacturer instructions.
7. Scoop into a clean container and freeze for at least 2-4 hours before eating. Enjoy!!
Lava Cake
Ingredients
* 1 stick (4oz) salted butter
* 6 ounces bittersweet or dark chocolate
* 2 eggs
* 2 egg yolks
* 1/4 cup sugar
* Pinch of salt
* 2 TBSP flour
* Extra butter and flour for coating the pan
INSTRUCTIONS
1. Preheat oven to 450°F. Butter and lightly flour four 6-ounce ramekins, or six muffin tins. Tap out excess flour. If using muffin tins, I recommend combining equal parts flour and softened/melted butter and applying a thin layer in each tin to prevent sticking. You can also use parchment paper if you’d like.
2. Melt butter and chocolate together, either in a microwave in 30 second increments (mixing in between), or over a double boiler. Mix until smooth and combined.
3. In a medium bowl, whisk together eggs with egg yolks, sugar, and salt until thickened and pale.
4. Fold melted chocolate mixture into the egg mixture. Add the flour and gently mix in.
5. Pour batter into prepared dishes.
6. If using muffin tins, bake for about 6-8 minutes. For ramekins, bake for about 10-12 minutes. Or, bake until sides of cakes are firm but centers are soft. Check on them early, It’s better to take them out too early than too late!! You don’t want to lose the lava haha.
7. Let cakes cool for 1 minute, then cover with a plate or cutting board and carefully flip the cakes over. Let stand for 10 seconds, then unmold. Or you can just eat them in the ramekins. Serve immediately with vanilla ice cream, citrus whipped cream, berries, whatever you like.
