Сделать надёжный ДОЛГОВРЕМЕННЫЙ датчик уровня токопроводящей жидкости (а не детской игрушки, работающей пять секунд при демонстрации) - не совсем простая задача. Явление электролиза и газовыделение на одном из электродов (в устройстве на электроды идёт постоянный ток) - в конце концов датчик покажет отсутствие воды (хотя реально вода на этом датчике присутствует). Вот почему надо на датчики подавать переменку. Либо отдельной катушкой сетевого трансформатора, либо аппаратной переплюсовкой, если питание от батареи.
