Bhindi masala is a simple okra or lady finger recipe made in north indian style. It can be served with roti, chapati or rice.
Ingredients & Quantity
Okra/Bhindi (cut into pieces) - 500 gms
Oil - 4 tbsp
Salt - 1/4 tsp
Onions (Chopped) - 2 Nos
Tomatoes (chopped) - 2 nos
Green chili (slited) - 1 no
Ginger - garlic paste - 1 tbsp
Cumin seeds - 1/2 tsp
Kashmiri red chili powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Garam masala - 1 tsp
Coriander powder - 1 tsp
Kasuri methi - 1 tsp
Water - 200 ml
Coriander leaves (chopped) - 2 tbsp
Instructions
1) trim the ends of the Okra and cut them Into 3 pieces.
2) Heat 2 tbsp of oil in a vessel, add the Okra pieces and saute for 5 - 7 mins on medium heat. Remove in a separate plate
3) In the same vessel more 2 tbsp of oil and add cumins seeds and allow to Splutter
4) Add chopped onions and green chili, saut├й till golden brown in color.
5) Add ginger - garlic paste saute till raw smell goes away. Approx 1 mins
6) Add tomatoes and salt and saute till tomatoes turn mushy.
7) Add Red Chilli Powder, Turmeric powder, Garam masala, coriander powder. Saute till masala comes together.
8) Add water and cook the masala till it becomes thick.
9) Add kasuri methi after lighty crushing it in between your palm.
10) Now add the fried Okra and mix well. Cover the lid and cook on low to medium heat untill Okra turns tender.
10) Do not overcook as it becomes soggy.
11) Serve it with rice or roti.
