it is mainly done for when humidity and temperature change the concrete can extend and contract without pushing and pulling on itself which can lead to internal pressure that can ultimately cause cracking

In a situation where control joints are not desirable, you may add enough hydrophilic fiber to the concrete mix to prevent young concrete from cracking. The slab also benefits from including reinforcing fibers in the mix to supplement standard rebar grids. Post-stress tendons to compress the slab will also stabilize and prevent long-term cracking. Of course, stabilizing the soil before pouring the slab is essential to avoid settling and cracking.

All of these will increase costs, which is why intentionally creating cracks is so cheap.

In Europe they are called dilitation joints. They also occur on road surfaces to allow contraction and expansion under different weather conditions, otherwise slabs will push and crack uncontrolled.

no control joints will crack , you will be filling the cracks twice and then you can enjoy a nice uncut piece of slab

Young concrete should go to school to learn to crack on these control joints - too many concrete slabs crack elsewhere.

Btw, another version of this joint is a fully cut one. Basically for big building, you design different area that are completly structurally independent.

Cutting is preferred for indoor use and businesses, but setting a groove while concrete is wet is preferred for outdoor use when looks or "smoothness" is not needed/wanted. Sidewalks are a great exampled of the latter.
