These were just farmers, not trained soldiers. Suddenly, the numbers skewed heavily in favor of the "livestock". When Striga realised that with enough fear even prey will strike back at their predators, she threw aside her loyalty to Carmilla and focused on the safety of her lover Morana.
Wish we could have seen more of Striga, heck, even just going back to Carmilla long enough to tell her that her ambitions were doomed to fail.
