Ingredients
• 2x skin-on chicken breasts
• 2x skin-on chicken legs (split into thighs and drumsticks)
• 150g flour
• 4 eggs
• 50g breadcrumbs
• 100g peanuts, chopped
• 2 tbsp curry powder

Method
Chicken Breasts
➊ Dry chicken breasts with paper towels or refrigerate uncovered overnight.
➋ Season with oil and salt, and place skin-side down in a hot pan for 3-4 minutes until crispy.
➌ Flip and transfer to an oven at 60°C until the thickest part reads 60°C.
