I've heard the rest of this one. He calls the wife and asks her how she feels about the word curvy. The wife responds that she's not curvy, she is fat and beautiful. The husband hangs up. The coworker gets upset that he "embarrassed her" in front of everyone.
My honest opinion, he's nta but the coworker is for trying to put him in his place and not understanding the dynamics between him and his wife. The coworker was new btw and had no right to step in the way she did. Personally, he was addressing her comment about being too fat to be loved when she's not fat at all. As a 5ft 4 highschooler, I weighed 145 at a healthy weight so unless she is very short, the coworker should probably go to therapy too for her figure dysmorphua

The rest of the story goes like this, she was going to get on social and start telling everyone what he said. So he quickly called his wife and said honey are you curvy or are you fat? And she laughed and something like this, “fuck that curvy girl crap! I’m fat” and she laughed he laughed. And I think he was getting called into Human Resources, but he doesn’t seem to think it’s a big deal.

NTA. Honesty has been demonized. Theres a big difference between fat and curvy. And being honest with yourself that you are indeed fat and even being ok with it to share with others isnt a bad thing. Her husband is amazing, not alot of people do find fat people attractive and he obviously loves his fat wife. I find it insulting the coworker was so appalled at the truth.
