The OS war is real. So many OSes nowadays are genuinely bad and under performative with all of those unneeded features.
Personally, I'd recommend linux, but with how much proprietary/exclusive software windows has... I'd say go for windows and just virtualmachine a linux OS on top of it.

Benchmarks (io,cpu,mem,etc) show linux beats windows and mac . Even gaming (amd owners at least) linux is now showing as beating windows in many games

My primary reason why i switched to fedora linux from windows 10 is because on windows there was a feeling, that someone listening me via microphone
