RECIPE
Ingredients:
For the tray bake:
* 1/4 large red cabbage, sliced into 2cm strips
* 280g beetroot, chopped into large cubes
* 1 tin (400g) black beans
For the miso sauce:
* 2 tbsp miso paste
* 1 tbsp soy sauce
* 1 tbsp maple syrup
* 1/2 tbsp sesame oil
* Juice of 1/2 lime
* 1 tsp grated ginger
* 2 cloves garlic, minced
For the satay dressing:
* 4 tbsp peanut butter
* 1 tbsp soy sauce
* 2 tbsp water
* 1/2 tsp apple cider vinegar
* 1 tsp maple syrup
To top it off:
Spring onion, fresh coriander, and sesame seeds.
Method:
1. Preheat your oven to 200 degrees Celsius.
2. Mix the ingredients for the miso glaze together.
3. Add the cabbage, beetroot, and black beans to a tray, then drizzle over the miso sauce and toss to cover.
4. Bake in the oven for 20-30 minutes until everything is soft and tender and the cabbage has charred slightly around some of the edges.
5. Whisk together the satay dressing.
6. Serve the roasted veggies with a drizzle of satay dressing, and garnish with spring onion, coriander, and sesame seeds.
