I see this as a triumph. Overcoming obstacles isn't easy, but you did wonderfully. Something occurred to me watching this video. If you have arms on the drawers that prevent them from detaching when pulled all the way out, you could put a flat board on one of the pulled out drawers, and use that as a platform to pour hot water, mix ingredients, and so on.

As someone who worked way too long in a hotel kitchen, a few thoughts popped into my mind for next time. I would setup a basket/tray with all of your favourites down low - maybe ramen, salt, pepper, snacks etc. For things like boiling water, if you are alone, keep a large pot down low in the kitchen. You can use that on the floor to strain things, garbage pot even etc. as needed. You are an inspiration. Thank you for sharing.

Are there adaptations you could make to the setup of your kitchen, and keep it set up that way everyday, since any day could be a wheelchair day?

They don't have to be expensive changes. Having the salt and pepper live somewhere else, for example. Maybe covering the edges of the drawer handles with pool noodles or foam pipe insulation, or switching out the handles with a different shape.

This is how I live my life now. Not knowing how to maneuver life in a wheelchair is difficult. I have grass so my chair doesn't roll through grass. So I'm stuck in the house unless my son takes me somewhere. But I don't mind being in the house. I have everything that I need and want. My significant other is wonderful. He does everything for me which gets on my nerves. But, that's just him. I love my independence. So this is teaching me patience. I may have lost my leg. But I didn't lose my life.
