This traditional Indian dessert is made with fresh grated carrots, milk, sugar, and a hint of cardamom. Perfect for festive occasions or as a sweet treat anytime, this easy-to-follow recipe will leave your taste buds craving for more.

Ingredients:

2 cups grated carrots
4 cups full-fat milk
1 cup sugar (adjust to taste)
1/4 cup condensed milk (optional for extra creaminess)
1/4 tsp cardamom powder
2 tbsp ghee (clarified butter)
10-12 cashews
10-12 almonds
10-12 raisins
A pinch of saffron strands (optional)
2 tbsp chopped pistachios (for garnish)
Instructions:

Preparation:

Peel and grate the carrots.
Soak the saffron strands in 2 tablespoons of warm milk.
Chop the cashews and almonds.
Cooking:

Heat ghee in a heavy-bottomed pan.
Add the chopped nuts and raisins, sauté until golden brown, and set aside.
In the same pan, add the grated carrots and sauté for 5-7 minutes until they soften.
Making the Kheer:

Add the milk to the sautéed carrots and bring it to a boil.
Reduce the heat and let it simmer, stirring occasionally, until the milk reduces to half.
Add the sugar and condensed milk, stirring continuously until well combined.
Mix in the cardamom powder and saffron milk.
Final Touch:

Continue to cook on low heat until the kheer thickens to your desired consistency.
Add the sautéed nuts and raisins, reserving a few for garnish.
Serving:

Pour the Gajjar Kheer into serving bowls.
Garnish with chopped pistachios and reserved nuts.
Serve warm or chilled as per your preference.
Tips:

For a richer flavor, you can add a little more ghee while sautéing the carrots.
Adjust the sweetness according to your taste.
You can also add other dry fruits like chopped dates or figs for a variation.
