Brookie Pie

You can also make these in a rectangular dish and cut into squares once cooled.

Cookie Dough:
140 melted butter (salted)
100g brown sugar
50g granulated sugar
1 or 2 tsp vanilla
1 x egg
200g Self Raising flour or plain flour plus 1 x tsp baking powder & 1/2 tsp bicarbonate soda
200g chocolate chopped any chocolate you like

Brownie topping:
250ml double cream
3 x eggs
40g cocoa powder
60g sugar of choice (add more if you like very sweet
70g chopped chocolate

Preheat your oven to 180C and add parchment paper to your oven dish.

Mix melted butter & sugar, add vanilla and egg and mix again. Fold in the flour until just combined (don’t over mix once you’ve added flour) add the chocolate and fold in gently. Spread the mix around the dish and bake for 8-10 minutes,

Quickly make your brownie ingredients while it’s in the oven by adding everything together and whisking it until it becomes a “moose” consistency, take the cookie out and pour the brownie mix over, bake for another 20-30 minutes depending how “set you want the brownie”
