Ingredients:

2/3 cup (150g) unsalted butter, melted and cooled
1 cup (125g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3 large eggs, at room temperature
1/2 cup (100g) granulated sugar
1 teaspoon vanilla extract
Zest of 1 lemon (optional, for added flavor)

Instructions:

Preheat your oven to 375°F (190°C). Grease and flour your madeleine molds to prevent sticking.

In a small saucepan, melt the butter over low heat. Allow it to cool to room temperature.

In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

In a separate large bowl, beat the eggs and granulated sugar together using an electric mixer until the mixture becomes pale and thick. This may take about 5 minutes.
