A little tip for you as you make the Caramel:
heat the ingredients slow and bring the entire caramel mixture up to 230 degrees, then pour over the shortbread
I let the caramel cool for a bit before adding the chocolate chips on, OR you can temper your chocolate to make sure it keeps a dark rich color
Lastly ... be prepared for the entire batch to be gone instantly 😉 this video shows me making a triple batch in a 16 x 11 inch rimmed baking pan. A triple batch is the way to go!
