SPLIT PEA COCONUT SOUP ๐ฟ

Perfect batch cook recipe that supports your gut health while giving you all the comfort feels. It is rich in fiber, protein, and anti-inflammatory ingredients to nourish your body from the inside out.
INGREDIENTS:
* 1 cup split peas (soaked overnight)
* 24 oz vegetable stock
* 12 oz coconut milk
* 2 tbsp coconut oil
* 1 celery stalk, chopped
* 1 onion, diced
* 4-6 cloves of garlic, minced
* 2 carrots, diced
* * 1 bunch kale (save & finely chop stalks for extra fiber!)
* 1 thumb ginger, minced
* 1 bunch fresh thyme (or 1 tsp dried)
* Lime for serving
* Plantains & cilantro for garnish
SPICES: 1 heaping tsp each:
* Garlic powder
* Onion powder
* Cumin
* Smoked paprika
* Ground allspice
* 1/2 tsp turmeric
* salt and pepper to taste
* * 1 scotch bonnet pepper, deseeded & chopped (optional for kick!)
METHOD:
1. Pressure cook soaked split peas 15-20 min, natural release 10 min, drain
2. Medium heat dutch oven: sautรฉ onion, garlic, celery, carrots & ginger until caramelized (5-7 min)
3. Add thyme, kale stalks, spice mix + splash of water
4. Add split peas, stock & coconut milk. Boil, then simmer covered 10 min
5. Stir in kale 3 min before serving
6. Finish with lime, plantains & cilantro
