My husband froze my tofu 😭. While I really wanted my soft silky tofu, what I ended up with isn’t bad.

When tofu freezes the water in the tofu turns into ice crystals that basically “stab” the tofu, causing it to “bleed” water and ruining the smooth structure. (This is a terrible way of explaining it but the best I can do right now 😂)

I've had fish tofu from the asians shops before, so I thought this was normal. Although I've never frozen tofu which I bought chilled, unlike other stuff e.g. uncooked meats.

So this happens because you freeze the water in the tofu, and then when it thaws, the water goes away leaving the solids behind.

It’s so interesting that he accidentally froze it… how does one “accidentally” freeze something like tofu? It’s not even a classic freezer ingredient. I’d have to really try to have it somehow accidentally end up in there.😂
