This level of skepticism destroys the capacity to make moral judgements. Suppose you see a baby being tortured on the street. Recognising this to be a heinous act, you decide to intervene. But on what basis have you concluded that baby torture is actually wrong? After all, you're not omniscient, you're not privy to all the moral facts about the world. Just because you, with your finite and limited mind, cannot conceive how baby torture couldn't be wrong, doesn't mean it's actually wrong. To argue like this would be egocentric etc.

This doesn't refute the problem of evil. You are just making an assertion over the top of it.
Just as you cannot demonstrate that Allah exists, you cannot demonstrate that wisdom was behind atrocities. You are just assuming it.
So it's an unsupported claim to fix an issue related to an unsupported claim.
