I ❤ eggplant! My favorite way to prepare it is stuffed with shrimp & tofu, fried to crispy golden perfection then tossed in a sweet & savory soy based sauce. So so good. Served with rice, of course😊

I actually don't necessarily mind the concept of mushy and slimy, but as far as I know eggplant is on my list of disdained vegetables. I just don't like the flavour of other squashes (is eggplant actually a squash?) like zucchini and was under the impression that eggplant would be similar in terms of those flavours I don't like. But this has me curious, at the very least this dish seems like it would give them a better chance so if I don't like them they're at least surrounded by good flavour. Now I'm gonna look into it. I know my mom hates eggplant but I'm not sure why, for her the texture might be a bigger deal.

I never liked eggplant until I tried some Thai eggplant. It isn't as mushy and slimy as the eggplant we grow in the US. I was surprised you didn't use Thai eggplant in this dish.

I was just talking about eggplant with another food creator. I used to like it when I was younger especially in Italian cuisine however my taste buds changed and I don't like it. I know it's been well over 20 years since I tried it. I told her I'll make a small portion of her recipe just to see if my taste goes back to what I liked it 😂
