Bibim-guksu
(Serves 2-3)
- 2 servings thin wheat noodles (also know as somen or somyeon noodles)
- 1 cup fermented kimchi
- 2 tbsp gochujang (pepper paste)
- 1 tbsp gochugaru (pepper flakes)
- 1 tbsp sugar
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1/2 tbsp sesame seeds
- 3 cloves garlic minced
- 2 tbsp kimchi juice
- 1/2 cucumber sliced in thin matchsticks
- 2 boiled eggs sliced
- Optional: lettuce or salad mix
Directions:
First chop the kimchi into small pieces and mix in the gochujang, soy sauce, sesame oil, sugar, gochugaru, sesame seeds, garlic and kimchi juice and set aside.
In a pot boil water and cook the noodles according to package directions, about 3-4 minutes. Once done, rinse and drain in cold water then set in a large mixing bowl.
Add in the lettuce (if using) and pour the sauce mixture on top and mix the noodles thoroughly.
Divide into 2 bowls and top with the cucumbers, eggs and garnish with sesame seeds. Enjoy!
