Engineer here, they dont need to put the l brackets the other way around because the shelves and objects on the shelves create a moment about the boytom of the l bracket, which progressively tensions the straps when loaded (especially the top one) outwards.
Its fine for the loads they are using, you can see this when they do a pull up.
The nylon straps will be fine as long as they dont get excessive moisture or UV, which they wont as they are indoors and covered.

Just put 3M double sided adhesive on the back of the L-brackets and then the ratchet straps over it like you have. The L-brackets do not have enough surface friction to keep the shelf from pulling the brackets down. The combination of adhesive and pressure from the straps will actually be incredibly strong.

Like many said... turn the brackets the right side up and have the shelves sitting on top with screw just holding them in place. This is a win-win situation as the bracket arms take the weight of the shelves+decor, and the straps can also act as hangers to prevent the brackets from slipping out.
