Happy Friday, gang! Easter weekend has arrived, and I’m here for it. Yours truly is hosting Easter brunch. What’s on the menu? A roast leg of lamb, honey spiral ham, and all the fixings. And my new hardwood floors were installed Thursday, so the house is ready for guests. I can’t believe the difference it made! Can’t wait to share in the next few weeks. Typically, we tour my home each year, and I showcase my porches (front and back), patios, living room, and bedroom. So stay tuned!

Today, Kelly bopped by for cocktails and appetizers. You are going to LOVE the roasted nuts with herbs! It is sooooo good! And I’m always a sucker for any cocktail that claims Aperol as an ingredient. This Citrus Spritz is the perfect spring cocktail. It’s very refreshing. I feel a ‘girls' night’ at my house is in order since my three-season porch is open for the season, and I have a delicious cocktail to share. And, of course, a charcuterie tray is always a good idea when friends or family stop by.

Citrus Spritz

1.5 oz. Aperol

2 oz. Orange Juice

¾ oz. Pomegranate Juice

½ oz. Simple Syrup

Prosecco

Orange Slice, for garnish

Thyme Sprig, for garnish

In a wine glass filled with ice, combine Aperol, Orange Juice, Pomegranate Juice, and simple syrup. Stir well and top with Prosecco. Garnish with orange slice and thyme sprig.

Roasted Nuts with Herbs

3 cups Raw Nuts, like almonds or pecans, or a combination

⅓ cup Olive Oil

2 tsp. Kosher Salt, plus more to taste

½ tsp. Black Pepper

1 tsp. Red Pepper Flakes

2 Garlic Cloves, minced or pressed

Zest from 1 Lemon

2 tsp. Fresh Thyme

Preheat oven to 350 degrees F. Spread raw nuts on a sheet tray and roast for 5 minutes. Stir the nuts on the sheet tray and roast for another 3-5 minutes, until fragrant and beginning to turn golden.

Meanwhile, stir the rest of the ingredients together in a large bowl. When the nuts come out of the oven, while they’re still very hot, immediately transfer them to the bowl with the olive oil and spices.
