Salmon is the ultimate thing to smoke. No other meat gets such a rich taste with just smoking and salt. If you want to smoke it like in this short, definitely don't add salt.

In the Philippines, fish can be processed differently and one by pickling it with fish deboned if possible and add with vinegar and spices for few days and fried it! Taste Superb. Its called "Di-na- ing".

I’ve been doing a gravlax style salmon for several months now, with a pastrami-style rub I developed and let it cure for about 2-3 days. Absolutely delicious.

If you think that's crazy, I did a traditional corning brine for corned beef, but on a whole pork butt. Left in in there for half a week so it penetrated all the way, then slow cooked it in a pan for about 8 hours. It was the best pork the family had ever eaten. It makes me wonder why nobody corns more meats.
