I think Phalanx and Fool’s Idol are both well designed bosses with nice unique mechanics and great music for both (on the original version). To be honest I’d say Demon’s Souls and Dark Souls 1 have the best bosses in the series. The combat mechanics really aren’t a big strength in the souls games, so I prefer bosses that feel memorable, have unique music/atmosphere/lore and have their own mechanics.

Armoured Spider deserves more credit I think. It’s a really unique design - it forces you to fight the boss head on instead of the ‘circle and stab the butt’ strategy that is viable with most bosses.
