Ingredients:
For the Rice & Chicken:
• 2 cups rice (boiled)
• 350-400g chicken (or 1 breast piece)
• Oil (for cooking)
• Black pepper (to taste)
• Salt (to taste)
• 1 tbsp tomato paste
• 2 tbsp tomato ketchup
• 1 tsp vinegar
• 1 tbsp oyster sauce
For the Noodles:
• 1 ½ cups noodles (or spaghetti)
• 1 carrot (julienned)
• 1 capsicum (sliced)
• 1 cup cabbage (shredded)
• 2 spring onions (chopped)
• Black pepper (to taste)
• Salt (to taste)
• 1 tbsp soy sauce
• 1 tbsp hot sauce
• 1 tbsp calamansi juice (or lemon juice)
For Garnishing:
• Mayo sauce(mayo, ketchup, garlic sauce, water) (for drizzling)
• Fried garlic chips
• Fried green chilies
Instructions:
1. Prepare the Chicken:
• In a pan, heat some oil and sauté the chicken until it changes color.
• Add ginger-garlic paste and fry for a few minutes.
• Stir in the tomato paste, ketchup, hot sauce, oyster sauce, black pepper, salt, and vinegar. Mix well.
• Add a bit of water and cook until the chicken is tender and the sauce thickens. Once done, remove from the pan and set aside.
2. Prepare the Noodles:
• In the same pan, add a little more oil and sauté the carrot, capsicum, cabbage, and spring onions.
• Season with black pepper, salt, calamansi juice, soy sauce, and hot sauce.
• Toss in the noodles and mix everything well. Set aside.
3. Assemble the Platter:
• In a serving dish, layer the boiled rice at the bottom.
• Add the cooked noodles on top.
• Pour the chicken with sauce over the noodles.
• Drizzle the dish with mayo sauce and garnish with fried garlic chips and fried green chilies.
4. Serve hot and enjoy!
