The reason most people usually get it dipped is the fact that it brings out so much flavor and the breads really hard to get through in an Italian beef usually because the meat is harder to get through than a brisket. So basically if u don’t get it dipped u end up with a sandwich that’ll make your mouth incredibly dry

It's like cereal max. When you first pour the milk the cereal is still crispy and after a few minutes the milk helps soften the texture but any longer and it's mush
When you first dip the sandwich it holds liquid but the bread isn't soggy yet, the fibers still have structural integrity. You bite down and suck the juice out and then chew, creating a delicately savory experience
