You could just talk to your DM about it and they can nerf some monsters or change the way that the poison effects work in their games. Or both.

As a dm I bullshit half my games. Like if I see a player try and be a poisoner I ignore a lot of enemies immunities so long as it makes sense.

Umm your DM can just change the immunity. Really not a problem. If they want u to have fun which I hope they do then talk to your DM about it.

Poison is also absurdly expensive in 5e. For the same cost as a single vial of basic poison, you can obtain two flasks of alchemist’s fire and get 1d4 damage every turn instead of just once.
