#bangladeshisweets Ingredients
1. Milk powder – 1 cup
All purpose flour – 2 tbsp
Rava (fine) - 2 tbsp
Baking powder – 1/4 tsp
Ghee – 3 - 4 tsp
Whole milk - 1/4 - 1/2 cup or as required
2. Sugar – 1 1/4 cup
Water – 1 1/4 cup
Green cardamom – 4-5, slightly crushed
Rose water or kewra water – 1/2 - 3/4 tsp
Lemon juice – 1 tsp
3. Oil – to deep fry
Method
To make the Balls
1. Combine milk powder, all purpose flour, rava and baking powder. Add ghee and mix well. Make a dough by gradually adding milk. Knead well to get a smooth dough.
2. Cover and let rest for 15 mts.
3. Grease your hands with little ghee and make small balls from the dough (they will double in size while frying). Do try to avoid any cracks on the balls.
4. Meanwhile to make the sugar syrup combine sugar, green cardamom and water in a wide vessel and keep over low flame. Once the sugar is completely melted add rose water, lemon juice and keep over low flame. Stir the syrup in between.
5. Heat oil in a pan first at high heat and then reduce to medium-low. Add the prepared balls to the oil, they will sink first and then will start floating. Gently stir the oil so they get evenly browned (do not fry over high heat, they will not get cooked inside). Cook till light golden in color. Remove 8-10 balls at this time. Continue to cook the remaining ones till reddish brown (gulab jamun color). Remove 8-10 to a paper towel. Let them cool for 1-2 minutes and then add to the sugar syrup.
