Ooh. Call me crazy, but I might try something like this with canned tuna, as a twist on tuna casserole. Kids love salmon sushi, but won't touch cooked salmon, saying it's too fishy. Canned tuna is a bit cleaner. Anyhow, I don't have the kitchen space to get the rotary slicer thing, but I do have a mandolin, and I figure that should suffice.
